Roles and Responsibilities
- Product Development and Characterisation: prepare composite flours and food prototypes with partially hydrolysed guar gum and conduct physicochemical and nutritional analyses
- Analytical Techniques: laboratory characterisation using FTIR, DSC, GPC, solubility and viscosity tests, fibre content and prebiotic index evaluation
- Shelf-life and Sensory Studies: texture analysis, sensory evaluation on a hedonic scale, and shelf-life monitoring under ambient and accelerated conditions
- In Vitro and Ex Vivo Assays: enzyme inhibition assays, glycaemic index evaluation, cell culture studies (glucose uptake, insulin signalling, antioxidant activity) and intestinal loop or everted sac models
- In Vivo Animal Studies: induction of diabetes in animal models, monitoring of blood glucose, insulin, lipid profile and HbA1c, and assistance in histological and biochemical analyses
- Documentation and Reporting: maintain detailed experiment records, prepare data reports and contribute to publications and project deliverables
